Others, however, thought that coffee and tea should be classified as “warm and dry” in the humoral spectrum. The issue was never resolved, though it exercised some of the era’s best medical minds for decades. Alcohol and caffeiene today are the world’s most widely consumed mind altering substances, and people are as curious as ever about what they are and how they work. Like Aristotle, they wonder why, when they’re drunk, they see things spinning and why alcohol can deaden sexual response. In addition, people have new questions, arising as often from media reports of scientific studies as from popular myth.

Humans, however, being relatively enormous, must rely on a complicated waste-elimination system. If we produced ethanol as a waste product of metabolism, as do yeast cells, it would circulate in our blood and we’d end up rip-roaring drunk whenever we exercised hard. This obviously wouldn’t be a very adaptive situation from an evolutionary standpoint. It’s not surprising, therefore, that in humans and other animals the process of anaerobic metabolism is slightly altered to avoid the production of ethanol.
